1 Tbsp 100% Spanish Organic Extra Virgin Garlic Olive Oil, divided
3/4 onion Red Onion-medium - diced
1/3 Package (5 oz pkg) Organic Baby Arugula
5 oz, Organic Baby Spinach
1/4 tsp Oregano, dried
1/2 tsp Granulated Garlic
1 tsp Sea Salt (Fine Ground)
1/4 tsp Pepper, black
Pinch each tarragon, smoked paprika
2 Tbsp Dill
1 lb Ground Chicken (Organic)
1 container (4 oz) Crumbled Feta Cheese
Heat ½ Tbs oil in skillet and saute onion for a few minutes, add spinach and arugula and saute seasoning with sea salt, pepper, smoked paprika, a little dried tarragon, granulated garlic, oregano – Let cool
Mix cooled spinach, onion
mixture with fresh dill and taste for additional seasoning – Add feta and mix
well – Add ground chicken and combine, do not overmix.
Divide into 4
portions and shape into patties.
Heat remaining ½ Tbs oil in
large skillet and cook burgers until cooked through – I browned and placed a
lid on the pan until cooked through and to 165 degrees.
